2 servings frozen udon noodles by Shirakiku
1 pound lean ground pork (90-96% lean)
4 garlic cloves, finely chopped
2 large eggs
1 medium carrot, thinly sliced or julienned
5–6 cups bok choy, chopped
1 bag bean sprouts
2 tablespoons avocado oil
¼ cup homemade chicken broth (or water)
1 green onion stalk, cut to 2 inches long
Sauce
3 tablespoons dark soy sauce
3 tablespoons oyster sauce
3 tablespoons sweet soy sauce
¼ teaspoon salt or 1 Tbsp fish sauce
1 tablespoon black pepper
Instructions
1. Cook the Pork
Heat a large wok or skillet over medium-high heat. Add the avocado oil and ground pork. Stir-fry until fully cooked and lightly browned. Remove from the wok and set aside.
2. Prepare the Udon
While the pork cooks, bring a pot of water to a boil. Add the frozen udon noodles and cook for about 2 minutes, or according to package directions. Drain and transfer to an ice bath to maintain a chewy texture. Set aside.
