What Is A Choy?

A choy, also known as Taiwanese lettuce, is a leafy green vegetable commonly used in Chinese and Taiwanese cooking. It has tender stems, mild flavor, and cooks quickly, making it perfect for busy weeknight meals.

If you can't find A choy, this recipe also works well with:

  • Bok choy

  • Napa cabbage

  • Tong ho (chrysanthemum greens)

  • Green beans

  • Chinese broccoli (gai lan)

  • Romaine lettuce

Ingredients

Serves 4

  • 3 large bunches A choy

  • 2 tablespoon avocado oil

  • 3 frozen minced garlic cubes (or 6 cloves garlic, minced)

  • 1 tablespoon oyster sauce

  • 1 teaspoon mushroom seasoning

Instructions

1. Prepare the Vegetables

Break the A choy into bite-sized pieces and rinse thoroughly 2–3 times to remove dirt or debris. Drain well and set aside.

2. Sauté the Garlic

Heat a wok or large skillet over medium heat. Add avocado oil and garlic.

Cook for about 1 minute until fragrant.

3. Stir Fry the Greens

Add the A choy to the pan and toss frequently to ensure even cooking.

4. Season

Add oyster sauce and mushroom seasoning.

Mix well so the seasonings coat all of the vegetables evenly.

5. Serve

Cook until the vegetables are wilted but still bright green, about 2–3 minutes.

Turn off the heat and serve immediately.
